Brekkie Time
I have a tumultuous relationship with breakfast. I kiiiiind of hate it. The only thing I like for breakfast is literal dessert, which doesn’t necessarily nourish me. Gluten, eggs, and dairy are mostly off the table for me since I have food sensitivities. It’s a fucking bummer, and then there’s my extremely picky palate.
I’ve been toying around with European and Asian breakfast ideas as a result of my brekkie dilemma. Those are the flavor profiles I enjoy the most.
All this to say that I made some bomb ass toast recently inspired by my culinary explorations. Recipe below!
Tomato Toast
Ingredients
Best looking heirloom tomato you can find (1, large)
Bread of choice, 2 slices (I like Trader Joe’s gluten free multi grain, but sourdough is always a great choice)
Minced garlic, about a teaspoon
Extra virgin olive oil
Crumbled goat cheese
Salt & pepper to taste
Instructions
Toast bread slices to your liking.
Slice heirloom tomato in semi-thick slices; add to toast.
Drizzle olive oil & sprinkle salt and pep onto tomato toast.
Add minced garlic and spread over tomatoes.
Top with crumbled goat cheese.
